Replace Add to cart with a request-a-quote form on products that have no stock.

On WooCommerce products that are out of stock, hide Add to cart and show a short “Request a quote” form that emails the shop manager. In-stock products stay unchanged.

Customers can add a delivery note. It shows on the order in wp-admin.

Add an optional “Order note” textarea to the WooCommerce checkout. Save it on the order and show it on the order screen in wp-admin. Do not change payment or shipping.
